Not only is cooking with in-season produce better for flavour, it’s also better for the planet. Fewer food miles = less transport emissions. (And fewer sad, bland oranges from halfway around the globe.) It’s the kind of delicious logic we can get behind.
So, we’ve got just the thing: a ridiculously easy, moist orange cake recipe that’s fresh, fragrant, and practically begging to be paired with your favourite Pod & Parcel pod.
Let’s bake:
The Zesty Orange Cake Recipe 🍰
Ingredients:
- 2 eggs
- 1¼ cups sugar
- 1 tbsp fresh orange zest (aka the zest of one sunshine-soaked orange)
- ½ cup fresh orange juice
- ½ cup oil (veg oil, margarine or butter - go with your gut)
- ½ cup yoghurt
- 2 cups flour
- 2¼ tsp baking powder
- ¼ tsp salt
How To Make It
1. Preheat to 150°C (300°F if you're Stateside)
Get that oven warmed up and ready to work its citrus magic.
2. Mix it all in
Throw everything into a bowl and mix. No rules, no stress. (Just good vibes and batter.)
3. Prep the pan and pour
Grease and flour your cake pan, then pour in the batter. Give it a little shimmy to settle. (Even cake batter likes to dance.)
4. Bake to golden glory
Bake for 45 minutes, or until it's golden, fluffy, and your kitchen smells like zesty sunshine.
5. Slice, sip, repeat
Cool it if you can wait. Otherwise, dive in while it’s still warm. Pair with your favourite P&P pod and call it a day well done. (We vote steamy slice, stat.)
Perfect Pairing Alert
Pair this golden citrus gem with your favourite Pod & Parcel pod. We recommend Munro for its bold richness or Florentino for a chocolatey contrast. (Because citrus + coffee = chef's kiss.)
